The Story

Taralli come from Puglia, the heel of Italy, where they have been made for centuries: a rope of dough, a ring closed by hand, a brief boil, then a slow bake until it snaps. They are what an Italian reaches for when someone comes by — with an aperitivo, with a glass of wine, with nothing at all. Ours are made with Italian semolina, Italian extra virgin olive oil, and Italian white wine. Every ring is shaped by hand and boiled before it is baked — the old step, and the one that gives taralli their blistered crust and their snap. Then into the oven, in small batches.
